Edomae sushi originated in Tokyo and is known for techniques that bring out the natural flavor of each ingredient.

At Sushi Hatsu, our chefs carefully prepare seasonal seafood and serve sushi as part of an omakase-style course. The menu changes depending on the season and the ingredients available that day.

Rather than simply serving individual pieces of sushi, our courses are designed as a complete Japanese dining experience, combining nigiri sushi with seasonal dishes.

Because we use seasonal seafood, the exact dishes and sushi selections may change from day to day.

Sushi Counter Experience

For many visitors to Japan, eating sushi directly at a traditional sushi counter is one of the experiences they most look forward to.

At our counter seats, you can watch the sushi chefs prepare and serve each piece in front of you.

You do not need to be familiar with special sushi etiquette to enjoy the experience. We want both first-time visitors and experienced sushi lovers to feel comfortable enjoying authentic Japanese sushi.

Private Room and Table Seating

Sushi Hatsu is not only a counter sushi restaurant.

We also have table seating and a private room, making the restaurant suitable for couples, families, small groups, business dinners, celebrations and special occasions.

Our interior was renovated in 2022 with a calm, modern Japanese design while preserving the atmosphere of a long-established Asakusa sushi restaurant.

Japanese sake and sushi are a natural combination.

At Sushi Hatsu, we offer a selection of Japanese sake, including sake from Toyama Prefecture, an area famous for both seafood and sake.
